Ingredients
  • 60 g unsalted butter

  • 60 g vegetable oil

  • 4 eggs

  • 120 g sugar

  • 5–6 ripe bananas

  • 2 tsp baking soda

  • 360 g all-purpose flour

  • 60 g miso paste

  • a handful of your favorite nuts

Instructions
  1. Mash the ripe bananas with miso paste until smooth. Add eggs, sugar, and both oils.

  2. Mix well, then add flour and baking soda. Stir until just combined — don’t overmix.

  3. Pour the batter into a loaf pan and bake at 175°C (350°F) for about 50 minutes, or until golden and a toothpick comes out clean.
